Here we have an unaged Sotol from Balam, the same folks behind various delicious mezcals and raicilla. The Sierra expression is produced from Delylirion, which is not part of the agave family, but rather belongs to the Asparagales family. The plant is roasted in a wood-fired ground oven and then distilled, before the spirit is bottled at 42% ABV.
Vegetal and clean, with more savoury herbaceous notes, a mineral undertone and an earthy finish.
