From the Dorcinvil Distillery in Haiti comes this terrific white rum, produced with organically grown sugar cane from the fields surrounding the distillery! Freshly pressed sugar cane juice is fermented, whilst a separate batch is reduced to a syrup before fermentation. Following traditional French 18th century rum production techniques, both reductions are copper pot distilled before blending, to create this authentic style of Haitian rum.

Underripe banana with earthy minerality, and green olives. Plenty of spicy crushed peppercorn heat with clove, cardamom, and crisp sugar on the finish.
