A hearty base of good quality rum is accompanied by layer upon layer of zesty, natural lime making for a vibrant spirit, bursting with robust, burnt caramel and intense fruity tang. A zingy treat splashed over ice, it also ought to pair incredibly well in sweeter fruit juices and cocktails, that are in need of a zippy kick. As we said – layers of lime! Dried peels start things off, balanced by sweet sultanas before bitter pith and a fruity confectionary tangle. Lime jelly sweets, dark chocolate, and more vegetal, herbal wafts of sweet mint nestle beneath.
The sweet tang of perfectly ripe limes opens the way with candied peels and oleo-saccharum, before a kick of prickly zest brings some enjoyably peppery warmth. A depth of drying spice and fragrant, rootsy Cola Cubes follows.
