Mark XXVII in the Exceptional Cask Selection series from Foursquare is the first to feature ex-Black Muscat cask maturation, and the results are glorious.
It’s a blend of two rums: one aged five years in bourbon casks, then another nine in those heady, floral Black Muscat barrels; and the other a fourteen-year-old bourbon-matured number. Both were distilled from molasses using pot and column stills, then married at Foursquare and bottled at 61% ABV without additives, filtration, or colouring. It’s proper rum, done properly.
Treacle tart dripping with syrup, sticky sultanas, overripe stone fruits – think nectarines and Victoria plums – backed by zesty orange peel, almondy marzipan, a flicker of ginger, and the earthiness of dried turmeric.
Light caramel rolls into jammy red fruits and peach compote. There’s that Muscat touch again – more plums, more juicy decadence.
Long and warming with spice for days. Think black tea, peppercorns, and crystallised ginger.
