Clairin Sajous is an intriguing style of sugar cane juice rhum from Haiti. Produced at Distillerie Chelo, where they press the sugar cane, and then reduce the juice over fires fuelled by the remains of the sugar cane! It's then fermented using wild yeasts and double-distilled before being bottled at full-strength. This is the 2021 vintage.
Wet grass, iced buns, ripe mango and a hint of peppercorn.
Bitter herbs balanced by milk chocolate, with continued grassy notes.
Very slightly oaky. Brown sugar and nutmeg.
