Cask-aged gin is a wonderful thing, and after just a short maturation, the spirit can take on plenty of character from the cask in which it dwells. This is a gin that spent 19 months slumbering in a cask that previously held amontillado sherry, imparting rich layers of candied nuts and orange peels to the oily juniper at its core. A release of 53 bottles.
Zesty notes of citrus oil and resinous pine lead to delicate notes of creamy lemon posset, with woody spice, cedar, and dried petals nestling beneath.
Generous waves of oily, piney juniper lead, with sandalwood, clove, and anise before notes of marzipan and dried orange wheels develop.
A gentle hint of vanilla, toasted nuts and soft oak join for the finish while the resinous, zesty core lingers on.
Remarkable gin, we tried and compared with other traditional ones in Negroni cocktail and also with aromatic and India tonic waters. We all agreed this aged gin gives an absolutely plus to the experience. Very distinctive but also versatile, a real pleasure to drink.
