Like Himbrimi Old Tom, the Winterbird Edition marries juniper berries, Arctic thyme and angelica flowers, all of which are hand-picked by founder Óskar Ericsson each summer from the Icelandic wilderness. Rather impressively it's distilled using only the natural heat of geothermal water, gently bringing all those flavours into the spirit. A delicious gin with a good cause, with 5% of the profit from each bottle sold donated towards nature conservation in Iceland.
