Greensand Ridge PX Cask Gin
This cask-aged gin from the wonderful lot at Greensand Ridge was created first by distilling its multi-award winning London Dry Gin with an altered recipe in order to moderate woody elements and add more citrusy brightness. The distillate was then matured for ten months in a 250 litre Pedro-Ximenez sherry butt. Should make a superb base for short cocktails such as the Negroni or Old Fashioned.

Nose
Fruitcake, forest floor earthiness, slightly peppery though maintains its sweetness.
Palate
Woody tannins and fresh juniper, with plenty of sweet dried fruit notes for balance.
Finish
A final flutter of leafy coriander and a touch of dark chocolate.
