This is Northern Ireland'd Boatyard Distillery's take on the traditional style of Old Tom gin. To make it, they age their excellent Boatyard Double Gin in bourbon barrels, then sweeten it with Fermanagh honey. It's bold cask influence and herbal, vanilla notes make it a great choice in a Martinez cocktail.
