Lemons from the Greek island of Skyros are hand-picked and wrapped in Aegean seaweed, which keeps the fruit fresh and imparts a distinct savouriness. Both the fruit and the seaweed are then whacked into a copper still to produce this unusual gin. It's as if it was made for a Martini!
