The Mezcal focuses on sustainability and social responsibility. The distillery uses eco-friendly practices and supports local communities. They source agave from sustainable plantations. This prevents over-harvesting of agave, which can take 8 to 30 years to mature.
To make the Mezcal, they roast agave hearts, or “piñas”, in pit ovens with volcanic rock. This roasting lasts several days. Then, the piñas are crushed and naturally fermented. This process keeps mezcal's robust, smoky, and complex flavours.
