Champagnes in Piaff's range fall under the Brut category, meaning “dry”. They believe this makes Piaff, fresher, more drinkable, and leaves you wanting more.
Piaff’s blend undergoes all traditional Champagne making methods set out by the CIVC, after all this is what makes it Champagne! However, their blend was created for a modern 21st century palate. Many of the historic Champagnes are high in sugar content with a dosage of up to 12g of sugar, Piaff has been stripped right back to somewhere in between 7.0 -7.5g dependent on the harvest.
