St. George Absinthe Verte

From the Californian distillery St. George Spirits comes a great absinthe created with ingredients such as star anise, fennel, lemon balm, hyssop and stinging nettles. It was the first legal American absinthe released after the ban was lifted in 2007, although the recipe was developed over an eleven year period! This is the 70cl bottling.

Tasting Note by The Chaps at Master of Malt

Nose Crisp anise and heady floral notes. A touch of vegetal nettle notes. Sweet, refreshing lemon.

Palate Intense wormwood is evident at the core of this one. Earthy hyssop and fennel arrive alongside. Authentic anise all the way through.

Finish Lasting anise and a slight touch of bitter herbs. Lemon balm lingers for a good while afterwards.

As a fan of Sazerac and Inside Job cocktails, I've experimented with a range of absinthes and this is unquestionably my favourite. Wonderfully rich and complex by itself it adds all the right notes to mixed drinks. Highly recommended.

Complex.
This is not anisette, ouzo, or sambuca. If you dislike the flavor of anise, this probably isn't for you, but it definitely isn't just drinking brandy through a black licorice straw. I like it on ice--forget the ritual, it opens up nicely as the ice melts a bit and there are layers of subtle flavor to explore. This is definitely for adults.

Sweet and Dangerous
Huge Aniseed reek from this - which immediately falls back to more gentle herbs, and a big hit of citrus and camomile on the palate. This made the very best Sazerac I've ever had. Kudos St George.
