The Melbourne Dry Gin Bottling Note
The Melbourne Gin Company was founded in 2012 by Andrew Marks, a former winemaker from nearby Yarra Valley, one of Victoria's premier wine regions. He uses stills that were designed for making perfume and makes use of local botanicals including grapefruit peel, rosemary, macadamia, sandalwood, honey lemon myrtle, and organic navel orange, alongside juniper, orris, coriander and others. The result is a distinctly Australian style of gin. This is bottled without chill-filtering.
