This Old Tom gin from Edinburgh's Old Poison was created to balance the refreshing elements of its Selkie Gin, bringing Scottish red berries and a Prosecco syrup into the mix. There's a lot going on here, though it all works well together. Ought to be amazing served with a good tonic and some fresh berries thrown in for garnish.
