Herbaceous at first, before delicate vegetal sweetness builds and builds. Flakes of sea salt develop on the mid-palate.

Had a few at The Cotswold Gin Pantry two weeks ago. Absolutely gorgeous with a subtle savoury finish. Best with a light tonic and ice, no citrus.
