Master of Cocktails Long Standing Beef

Right then chaps – time for this week’s #MasterofCocktails. We’re making a sort of Old Fashioned/Manhattan hybrid using Maple Syrup as the sweetening agent. Oh, and candied bacon as a garnish, as if this cocktail recipe wasn’t sounding awesome enough already.

However, before you even think about touching any of the liquids, you’re going to need to candy your bacon. No, that’s not a euphemism.

It’s pretty simple. Set your oven to 175c, grab your bacon, some light brown sugar, and cinnamon:

Pour a handful of sugar and pinch of cinnamon into a bowl:

Dip the hog-slices into the sugar and onto a baking sheet. Stick them in the oven for about 20min.

This is what you end up with (the dark colour is good – it’s caramelised sugar, not burnt bacon):

With your bacon thoroughly candied (still not an euphemism), we can move onto the cocktail.

So. First things first – grab a coupette glass, and bang it in the freezer.

Now measure out 50ml of the rather superb Hudson Whiskey Manhattan Rye.

Apart from being delicious – this stuff is ‘sonically-matured’, using bass-heavy west-coast hip hop. I shit you not.

Pop this into a stirring glass with plenty of ice.

Now maple syrup. 10ml. This stuff is actually matured *in* Hudson casks.

I’ve not checked, but maturing a cocktail ingredient in a cask used for another ingredient, might well be ‘the coolest’.

Finally, a good couple of pipettes of Bitter Bastards Cinnamon Bitters:

Give it a good stir for 30 seconds or so:

Strain into your pre-chilled coupette…

…express an orange twist over the glass and garnish with CANDIED BACON. Oh yes. That’s right.
