Right everyone – ready for another instalment of #MasterofCocktails? This week’s is pretty awesome, and has a pretty awesome name too – IL Beetz. I’ll explain the reasoning behind that later…
We’re putting together this drink using FEW Spirits American Gin – super-rich and ‘whisky-like’. It’s more than enough to stand up to the rich, roots-y quality of the Beetroot juice we’re using.
So – to business.
You’ll be needing these…
List of Ingredients
- 30ml of FEW Spirits American Gin
- 30ml of Beet It Beetroot Juice
- 20ml of Pierre Ferrand Dry Curaçao
- 1 Pipette of Bitter Bastards Fennel Bitters
Start off with 30ml of FEW Spirits American Gin.
Bang that into a stirring glass with a big handful of ice.
Next – 30ml Beetroot Juice. The better, the, um, better…
Next, 20ml Pierre Ferrand Dry Curaçao. This sounds like quite a lot, but this drink plays on the Beetroot’s Sweetness, and we’re just about to add a savoury ‘cut-across’…
…In the form of Bitter Bastards Fennel Bitters. These bitters are centrifugally-extracted which, as well as making them immediately cool, also makes sure they’re naturally fresh and vibrant.
We want one full pipette.
Give it a good stir to chill and dilute…
Before you pour – make your garnish. Thusly.
Strain into a frozen coupette glass.
Pop your garnish on, and serve. Need a name for this, don’t we? Well. FEW Spirits are in Illinois, and it’s got Beetroot Juice in. We’ll call it (obviously) – IL Beetz.

One final note the beetroot – when you wake up tomorrow morning – remember – you *probably* don’t have kidney failure…
