Whisky (or whiskey, depending on where you’re sipping) is one of those rare drinks that feels both ancient and endlessly new. At its heart, it’s simple. Just distilled grain, aged in oak. But look a little closer, and you’ll find a world of variety, craft, and character.

Scotch whisky is often the whisky people picture first, with its rich history and global appeal. OR American whiskey, from Bourbon to rye, with its sweetness, spice, and swagger. Irish whiskey, once the world’s favourite, is back on the rise after decades of slumber, and Japanese whisky has evolved well beyond an area of excitement and intrigue to sit proudly among the old guard as a whisky heavyweight.

But whisky’s no longer just the realm of the “big four”. If we were writing this intro five years ago, we would talk about distillers in India, Taiwan, Sweden, Canada, Wales, and England crafting whiskies that deserve serious attention. But the world of whisky has expanded beyond that, to Argentina, Namibia, Lebanon, China, and yes, even Wales. There's seemingly no limit - geographically, philosophically, culturally - to whisky making. It's a beautiful thing.

The story of whisky itself goes back centuries. While the history is nuanced and constantly challenged, the simplified story is this: The art of distillation spread from Alexandrian Greece through medieval Arabia and Latin Europe before landing in Scotland and Ireland in the 14th-15th century. There, farmers began distilling surplus grain (perhaps first as a way to preserve it), then because what they made tasted brilliant. The addition of ageing it in oak was where early whisky makers truly struck gold. The fiery raw spirit softened, darkened, and took on the flavours of the cask.

These days, for a spirit to legally call itself whisky, it must mature for at least three years in oak. The wait pays off beautifully, yielding spirits that range from the light and floral to the dark, smoky, and rich. Whether you lean towards single malt Scotch, blended whisky, grain whisky, or rye, every drop tells a story. It's one that began hundreds of years ago but still finds new chapters every day.
