Walsh

Bernard and Rosemary Walsh created the Hot Irishman Limited in 1999, with the desire to blend and bottle the perfect Irish Coffee recipe. Expanding upon its success, in 2005 the couple attempted to rival the big Irish cream liqueur brands by creating a recipe that brought things back to basics, with The Irishman Irish Cream liqueur, made using 100% Irish dairy cream and premium Irish whiskey.

However, it wasn’t until 2006 that the Walsh’s began to venture head-on into the world of whisky, when they signed a long-term supply agreement with Irish Distillers – the Whiskey Supply Agreement - allowing for the distilling and laying down of Irish whiskey stock to its specifications. This facilitated the 2007 launch of The Irishman Whiskey, the first singular whiskey released by Walsh, which was followed in 2009 by Writers Tears.

After seventeen years of success Bernard and Rosemary Walsh, in a joint venture with Illva Saronno, who owns the Tia Maria brand and Pat Rigney, the founder of Boru vodka, were able to open the Walsh Whiskey Distillery in June 2016. Located at the 18th century Holloden House (c.1755) in Royal Oak, County Carlow and comprising 40 acres of pastoral land, the rather beautiful setting was thankfully designed to incorporate a visitor experience, which was made open to the public in July 2017. A total of 75,000 ‘whiskey tourists’ are expected to visit annually by 2021.

The Walsh Whiskey Distillery uses both pot stills and column stills, and is the only independent Irish whiskey distillery producing all three styles of Irish whiskey – pot still, malt and grain - from its two production lines. At its peak capacity, it can distil and bottle up to 650,000 cases (8 million bottles) worth of whiskey annually, which is a startling 9.7% of the total Irish whiskey exports in 2014. As if that wasn’t enough, work on the construction of two maturation houses with capacity for 60,000 barrels commenced in 2017. This will include Marsala wine casks from Saronno’s own Florio Marsala Winery in Sicily, as well as Kentucky bourbon barrels, sherry butts from Jerez and rum barrels from Saint Lucia.
