This manzanilla sherry from top Spanish producer Lustau is made from 100% palomino grapes in the region of Sanlúcar de Barrameda, which sits on the estuary of the Guadalquivir River with Atlantic breezes coming off the ocean. The unique microclimate of the region imparts unusual sea salt character to the yeasts that rest on the surface of the sherry as it ages. This sherry spent five years ageing under the flor in American oak casks before being bottled without any treatment.
Fresh and briny to begin, with notes of floral tea, dried herbs, anise, and roasted nuts, with some savoury soy and fennel nestling beneath.
