Over in Spain, Raúl Pérez is busy making some rather fabulous wines, such as this 2016 Las Gundiñas! A field blend of Mencia, Estaladina, Souson and Alicante Bouschet is whole-bunch fermented and then aged for a year in refill oak barriques. Though complex, it's a wonderfully easy drinking wine.
Bitter dark chocolate supports jammy fruit sweetness, with dark plum and blackberry, with a hint of savoury minerality.
