    Sullivans Cove French Oak Cask

    This Aussie whisky comes from the island state of Tasmania. When they are not being harassed by the Tasmanian devils they produce some of the best whisky being made south of the Equator at this moment. The whisky in this bottle was finished in French Oak Port Casks for a fruity flavour.

    Tasting Note by The Chaps at Master of Malt

    Nose

    Melted dark chocolate and red wine gums open up a big fruity nose. Hints of anise, white pepper and coconut.

    Palate

    Jelly babies and a little more white pepper dominate the palate entry with cinnamon and a lick of fresh cut grass developing.

    Finish

    The finish is swift but substantial with fruitcake notes.

    Overall

    A full-bodied whisky that showcases what the Australians are doing well.

    Thank you M.O.M for the heads up on the French oak cask situation. I hope everyone can see this message and see that Master of malt has got us all covred so we will all know when it's going to be restocked and that they work very hard to get us and give us all the opportunity to sample such a earth shattering and globally demanded dram. Also Sullivans cove is a small distillary and even smaller if compared to big Scottish well known distilleries and currently are not equipped and lack facility's to knock out bottles like the Scottish distilleries can and say they are quality and not quantity orientated. I think Sullivans cove will keep doing what they are doing now as this demand for more means that people will keep wanting and is almost guarantied to snap up the bottles when put on to the market but if the price becomes uneconomical and unviable because demand has pushed it up then this narrows your target market for customers as they will only be a few who can afford such a dram and this is how a business can go under so it becomes a balancing act so the folk who are complaining about the price of this need not worry as it will stop going up in price and possibly come down in price.

    Rating a Sample

    Received this as part of a tasting set and thoroughly enjoyed all its complexities. As noted by Master of Malt, the warm cinnamon and cut grass on the palate are pleasantly predominant against a prickly, peppery background. However, I found the cinnamon and pepper don't quite balance with the sweeter notes, which by the finish, are no longer found. I would have liked to experience more of the fruitcake on the finish, but that didn't stop me from enjoying the full sample. Maybe it's the winter weather, but this whisky needs a soft leather chair and warm fire on a cold night.
