That Boutique-y Whisky Company has taken another trip across the globe for its Return to Oz collection, which includes this, its second batch of single malt from the Fleurieu distillery. Fleurieu was founded in 2016 by a husband and wife duo of ex-brewers, who interestingly opt for an eight-day fermentation using brewer's yeast, rather than the more traditional distiller's yeast. This peated single malt was matured for three years in Apera wine casks, an Australian sweet wine, similar to sherry, so expect plenty of sweet, stewed fruit and hearty smoke here.
Batch 2 is a release of 428 bottles.

Poached stone fruits, caramelised nuts, burnt sugar, and whispers of medicinal peat smoke.
Hearty helpings of sticky sweet raisins and dates, with fig rolls and nutty malt. A touch of salinity arrives in time, bringing savoury balance.
