This joven mezcal from Ramo de Rosas is made from Espadín agave that spent eight years maturing before it was harvested. After cooking at low temperatures for four to five days, the agave spends eight days fermenting in wooden barrels before double distillation in a copper pot still.
Rounded notes of herbs and spices, with green, vegetal agave, zesty citrus peels, peppercorns, and delicate smoke.
