
Four Pillars Sherry Cask Gin is an intense, rich new edition which was distilled in Healesville before being barrel-aged in 42 sherry and Australian fortified wine (Apera, created by friends of the Four Pillars) barrels which contained expressions between 15-35 years old.
Four Pillars arranged these barrels into a solera system, where the aged gin is then bottled from the bottom row of barrels after a year before a small amount of Spanish Amontillado sherry is added to the top for extra depth of flavour.
