Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop.
Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.
The juniper is light and sweet, supported by touches of chopped mint, fresh citrus and floral hints.
It opens with candied peels and angelica, with warm cinnamon and white pepper building to a spicy mid palate. Subtle fruity notes throughout.
Suitably drying on the finish, with lasting notes of liquorice and lemon zest.
Brilliant with a slice of orange a real stand out gin.
Friends raved about this gin. My husband bought me a bottle and I looked forward to it as gin and tonic is my preferred drink. I do not like it at all. Too many competing flavours and the finish is not refreshing like most gins. Four Pillars has a sickly aftertaste.

I have been enjoying my first bottle of this superb gin over the last several days. So far I have had it with tonic, with tonic and lime, with tonic and lemon and neat both straight and on the rocks. It is wonderful in all situations, but it is the first gin that I personally think is the most smooth and enjoyable neat. If you are a gin drinker, I could not imagine that the uniqueness and enjoyment would not be there for you. "Nuff said - back for my next sip.
