Paula and Sion met in the green fields of Shropshire. This was the start of a great partnership.
Paula is from Poland and respects Polish distilling traditions. Her Master's degree in Engineering helped her passion for distilling.
Sion is proud of his Welsh background and farming. He studied Agricultural Science. He didn't start with distilling but grew to love it. He first thought about distilling essential oils from crops. This then changed to making spirits.
Together, they helped start a distillery in Northamptonshire in 2012. Sion then worked at Langley Distillery in Birmingham and Union Distillers in Market Harborough. Paula was already there.
In 2018, they started Four Feathers. They used their experience to make their own spirits. These include London Dry Gin and a Botanical vodka. The vodka comes from a family recipe of Paula's.
Their spirits focus on botanicals. Distilling botanicals began with alchemy. Early potions and medicines changed into spirits for enjoyment. Four Feathers uses old methods to make their spirits. They aim for a balanced and pleasing taste.
Their distillation follows tradition. They macerate botanicals and heat them gently overnight in a still. This releases essential oils that flavour the spirits. Balancing these oils is key. It gives the spirit character and depth. They take great care in distillation. After distilling, they let the spirit rest. Then they blend it. They adjust the alcohol level with spring water from their farm in Wales.
