Decidedly upmarket Cava from Vallformosa, a Barcelona-based producer with over 150 years of winemaking experience. This is made from a single grape variety, the distinctly spicy xarel-lo. It's then subjected to a long ageing period so that it develops rich, toasty, nutty notes. This is a bit special.
Lemon and peach on the nose with rich bready and yeasty notes. Intially floral, peppery and fresh on the palate and then it fills out with lots of creamy yeasty notes and almonds.
