This single malt from London's Bimber distillery matured for eight years in a selection of bourbon and Pedro Ximénez sherry casks. The whisky celebrates Bimber's artisanal approach of using floor malted barley from a single farm, open topped fermentation, and direct fired copper pot distillation.
Fresh, ripe strawberries and raspberries sit alongside meringue, whilst mango and pineapple join gingerbread men and an assortment of gummy sweets.
Supple and immaculately integrated. Berry and tropical fruit salad is topped with drizzled melted chocolate, nougat pieces and chopped hazelnuts. Oak spice follows – gently piquant and adding uplifting cinnamon and a peppery bite.
Lingering fruit sweetness married perfectly with enduring oak and fading spices.
