The Macallan Harmony Collection Inspired By Phoenix Honey Orchid Tea
The Macallan Harmony Collection is inspired by its deep-rooted connection to the natural world. This limited annual release is crafted in collaboration with world-renowned chefs, connoisseurs and artistic creators to produce innovative whiskies which unveil unique flavour.
This year’s fifth release takes inspiration from the world of tea collaborating with JING.
Fancy a brew? Have a whisky
The Macallan’s journey is one from acorn to glass, whilst JING’s follows a path from garden to cup. Both begin with water and land, and a connection with nature is key.
Ingredients
15ml Crème de Peche
20ml JING Tea Phoenix Honey Orchid syrup (recipe below)
20ml Fresh lemon juice
Pinch of salt
Soda to top
3 dashes Angostura bitters
Garnish: Slice of fresh ginger and orange peel
Drink method
Shake all ingredients except soda with ice. Double strain over ice into Highball glass, top with soda, and garnish with a slice of peach.
Tea Syrup method
Steep 10g of JING Phoenix Honey Orchid (or another quality oolong) loose leaf tea in 100g of boiling water for 10 minutes. Strain and mix with 200g Scottish heather honey. (A batch will keep in the fridge for up to two weeks).

The Macallan Harmony Collection Vibrant Oak

Roll up, roll up for the fourth instalment in The Macallan's limited annual Harmony Collection, created in collaboration with Cirque du Soleil! Vibrant Oak reflects the influence of sherry-seasoned casks on The Macallan's signature style, having matured in a combo of first-fill sherry-seasoned American oak and refill sherry casks. The outer packaging and label are made from repurposed oak chippings, leftover as a by-product in the cask-making process, pretty neat.
The Macallan Harmony Collection Rich Cacao
Single Malt Scotch Whisky • 70cl • 44%
The Macallan has collaborated with renowned pastry chef Jordi Roca (from El Celler de Can Roca, which has three Michelin stars, we'll have you know) on a smashing single malt with a decidedly chocolatey flavour profile. Macallan whisky maker Polly Logan worked with Roca as well as Casa Cacao chocolatier Damien Allsop on this expression, which is made with whiskies aged in sherry-seasoned European oak casks and sherry-seasoned American oak casks. The presentation box also pays homage to the chocolatey characteristics of the whisky, having been made using husks from cacao pods!
The Macallan Harmony Collection Intense Arabica
Single Malt Scotch Whisky • 70cl • 44%
In the second limited annual release of the Harmony Collection, The Macallan looks to coffee. This Highland single malt is inspired by intense arabica, with plenty of roasted coffee bean, red fruit, and chocolate notes finding their way into the whisky, having been matured in sherry seasoned oak casks. Even the packaging has a coffee connection and is made from recycled cascara.
The Macallan Harmony Collection Guardian Oak
Single Malt Scotch Whisky • 70cl • 44.2%
Part of the fourth instalment in the Harmony Collection, created in collaboration with Cirque du Soleil to tell The Macallan's oak story imaginatively. The single malt, released initially as a travel retail exclusive, was aged in a combination of first-fill sherry seasoned European oak casks and refill sherry casks. These were selected to deliver the classic European oak flavours of dried fruits and sweet spices with a long and rich oak finish.

The 485-acre Macallan estate lies within an area of natural beauty in the heart of Speyside, producing whisky with their curiously small stills that ensure maximum copper contact, shaping the rich, fruity spirit. This spirit is then aged in exceptional, distinctive oak casks of the highest quality, which are all seasoned with sherry in Jerez De La Frontera, Spain.
All of The Macallan's whiskies are bottled at natural colour, put together by the master whisky maker whose skill and craftmanship is typical of the mastery exhibited throughout the entire process. All these points make up The Macallan's Six Pillars: the very foundation stones of this iconic single malt Scotch whisky.
