A palo cortado from Sanchez Romate. Palo Cortado sherries are essentially fino sherries that lose their flor after a while of ageing. The result is that the sherry starts to age oxidatively, like an Oloroso. This means you get a crisp, amontillado/fino-like sherry with the rich flavour of Oloroso. Only one or two percent of all sherry grapes naturally become palo cortado.
