
A Pedro Ximénez from Triana Hidalgo La Gitana, made using PX grapes which are first left in the sun to become raisins before pressing. The sherry is aged for more than 30 years in the solera system to concentrate all its rich, nutty aromas and flavours. Before bottling, the wine is stabilised using a cold treatment process and filtered.
Dense, rich, and sweet with caramel, stewed black fruit, coffee, oily nuts, and old oak.
