Rum making countries

What is rum made from?

Rum is made by taking sugar cane juice, syrup, or molasses, fermenting it with yeast, and distilling it. Longer fermentations (sometimes up to a week) encourage the development of more esters (volatile compounds) which smell of pineapple. Due to the variety of rum made all over the world, all kinds of stills will be used from pot, column, and hybrid, even wooden stills in Guyana. It’s then up to the producer to age the rum if they wish, and they might even flavour it, often with vanilla, citrus peel, and spices like cinnamon. What to mix with rum

There are so many famous rum cocktails – Mojito, Daiquiri, Piña Colada, Mai Tai, and so on – that your options are almost endless. Rum-based twists on classic cocktails like an Old Fashioned or Manhattan are also proving very popular, though if you’re not feeling up to shaking or stirring then simply mixing it with ginger beer or cola will do. What will work best will of course depend on what type of rum you’re working with, so make sure you find some delicious recipes on our Rum Cocktail Guide.
