Wild Oxen Pure White Rum is made from unrefined Demerara sugar and then fermented for a full week using both rum yeast and wild strains. It's then distilled in a single run through Big Phil – the distillery's hybrid still with a six-plate column – to create a spirit that balances precision with punch. This British white rum from Abingdon Distillery showcases Jordan Morris’s meticulous approach to rum-making. No additives, no shortcuts, just a crisp, characterful white rum that’s as comfortable in a Daiquiri, Mojito, or Jungle Bird as it is sipped neat.
Bright citrus leads with lemon sponge cake and limoncello, then wafts of sea air and fermenting sugar syrup. There’s a slightly savoury layer too with ink, liquorice, and a hint of pistachio biscotti. Grapefruit peel and a touch of fig lend further complexity.
Lighter in body but not in flavour. Herbaceous notes of basil and cardamom meet toasted biscuit, cane juice, and a dry mineral edge reminiscent of a crisp white wine. Liquorice again makes itself known, bolstered by whipped cream, black tea and roasted nuts.
Clean and quick, with mellow vanilla and nutty undertones lingering gently.
