
Hailing from the Rio Hormiga Colorada valley of Mexico, Sombra is a Mezcal (kind of like Tequila but more rustic) that is made from the Espadin Agave which is a cactus-like plant that is actually closer to a lily. The central stalk of the Agave is baked underground to convert the starch into sugars then the juice is fermented and distilled, finally it is bottled as a Silver or un-aged Mezcal. The Mezcal style is herbal, vegetal and, due to the baking of the Agave, smoky.
Smouldering bark, citrus pith followed by wood smoke and lemon juice.
Big rich smoke chased by sugar water, orange skin and sea salt.
The smoke diminishes and makes way for light tropical fruits and a little mixed spice in a lingering finish.
Lots of smoky notes with overtones of citrus, this is a really upfront mezcal.
