A 2019 edition of Mezcal Amores' Espadín expression, made with the titular agave variety. The plants are harvested at between seven to ten years of age, and cooked in a conical stone oven before being double distilled. Top stuff, this. Not only is it delicious, but the folks behind it work with small agave producers to plant ten agaves for each one they use, as well as ensuring they're paying the mezcaleros they're working with a fair price.
Fresh vanilla and citrus blossom, balances by spicy herbs, wood smoke and leafy coriander.

Straight up the smoke in this is quite subtle but comes across pine - herby and very fresh. I could quite easily sip this straight up with possibly a slice of lime. Taste tested against another mezcal in an Ultima Palabra and it was good but a bit hidden - I think this shines better on its own or in a Mezcal Margarita.
