
Derrumbes Durango is made with Cenizo (Durangesis) agave in Nombre de Dios, Durango. The process of creating this intriguing mezcal is overseen dutifully by maestro mezcalero Urial Simental, from the cooking of the agave in stone pits underground using black oak, to the fermentation in underground tanks lined with pine wood and wooden stills.
The result is a mezcal with a distinctive Derrumbes character, from a region that is gaining a reputation for mezcal production for all the right reasons.
Very well composed, it begins with sweet dark fruit flavors, before wood ash, agave pepperiness and dry minerality steadily reveal.
