An unusual and delicious sipping Mezcal from Del Maguey. This spirit is named "Pechuga", which means chicken breast - a reference to the third distillation, in which a basket of fruit and a chicken breast is suspended in the still. (Because, why not?)
Aromatic and herbal with notes of apple peel, smoke, orange peels, parsley and soft smoke.
Rustic and full, herbal. Hints of lavender, agave nectar.
Good length, smouldering wood ashes on the tail.

I appreciate mezcal for the same reasons I enjoy a peated scotch whisky. I enjoy the smoke. Many mezcals are one dimensional though, and that leaves one wishing for more. This one has a depth of flavor that I have not yet experienced in others of the genre. If there's smoke, there might as well be smoked meat. I can't wait to try the Iberico that I recently ordered.
