
Not all Madeira is seriously sweet. If you want something a little drier then try this wine from Henriques & Henriques. It's made from a blend of 90% tinta negra mole and 10% sercial and the result is fresh, citrus-led fortified wine with a distinct saltiness to it. This would be lovely served chilled instead of fino sherry and makes an amazing vermouth substitute in a Martini. Oh and a bottle left open will last for weeks... if you can keep your hands off it.
