Fino Sherry

Fino is the driest, most delicate style of sherry. It’s made from the palomino grape, normally the first pressing which produces the lightest wine, usually fortified to 15% ABV, and then aged in a solera (system for blending wine) under a layer of yeast known as flor. This keeps the oxygen away from the wine, preserving the pale colour and subtle flavours like lemons, apples, and almonds. A manzanilla is a fino that has been aged by the sea at Sanlúcar de Barrameda. If you leave a fino long enough, the flor will die, and it will evolve into an amontillado.
