Bunnahabhain 21 Year Old Pedro Ximénez Cask Finish was a labour of love for master blender Julieann Fernandez and the distillery team. Together, they selected 21 casks, each and everyone inspired by the unfiltered, straight-from-the-cask tastings enjoyed by visitors at our distillery’s coastal warehouses.
There’s a balance to strike for Bunna, ensuring the original spirit character remains while taking on the powerful flavours of Pedro Ximénez sherry. Bunna whisky is known for its sherried maturation, but Pedro Ximénez is thicker and sweeter than the usual oloroso. The team have harnessed its syrupy flavours like toffee and figs here.
The result is everything you’d come to expect from a mature, well-rounded Bunnahabhain spirit. The Pedro Ximénez casks lend rich, sweet notes without overshadowing the whisky's character, creating a harmonious blend of spirit and wood.

This Islay single malt spent the majority of its ageing in oloroso sherry casks before undergoing a final twenty-one-month finish
in the finest Pedro Ximénez casks.

Bunnahabhain 21 Year Old Pedro Ximenez Cask Finish was bottled at cask strength, a big 53.6% ABV. The result is a bold, mature Bunnahabhain expression that delivers creamy berries, roasted nuts, and a touch of sea spray, all layered with a sweet, syrupy complexity that lingers on the palate with notes of figs and molasses.
Nose
Sweet nose with notes of dried fruit, nutmeg spice, honey, caramelised walnuts and a gentle touch of oak.
Palate
Initial spicy notes of cinnamon and clove fade to reveal grape syrup which coats the palate, with raisins, figs, candied cherries and a hint of liquorice.
Finish
Warming and smoky, leading to a sweet, drying, and Lingering spicy finish of toasted coffee and cocoa.
