Cask Aquavit from Bivrost starts its life much like its unaged counterpart, distilled from potatoes and flavoured with caraway, orange, star anise, coriander and fennel. Then, however, this expression has been matured in Oloroso sherry-seasoned casks, stowed away in former NATO bunkers over in Arctic Norway, which is pretty cool! The ageing process gives it some buttery, oaky notes alongside the warming spices.
Black pepper leads into a touch of juicy sweetness, with oily orange peel and baking spice, rounded off by buttery oak.
