The story of a 49-year-old whisky is one steeped in evolution and finesse. Known as whisky or whiskey, depending on the production region, this distilled spirit is crafted from fermented grain mash. Whisky boasts a long and varied history, with its beginnings traced back to ancient civilisations. The Babylonians, in around 2000 BC Mesopotamia, initially used distillation predominantly for perfumes.

However, it was not until the 15th century that the technique reached the shores of Ireland and Scotland, thanks to travelling monks, and started to resemble today's whisky. The creation of whisky requires a painstaking process, commencing with the malting of the grains. This involves soaking the grains, allowing them to germinate, and converting the starches into fermentable sugars. Following this, the grains are dried, ground, and mixed with hot water to create a mash, to which yeast is added for fermentation.

The resulting wash is then distilled, usually in copper pot stills, to refine the flavour and concentrate the alcohol. This distilled spirit, now referred to as “new make spirit,” is placed in wooden casks to age, acquiring its complexity and depth of flavour over the years.

Regions including Scotland, Ireland, the United States, and Canada are celebrated for their whisky production, each possessing unique styles and stringent regulations. Scotch whisky, for example, must be aged for at least three years in oak casks within Scotland, resulting in its complex character. Conversely, American Bourbon, another type of whisky, necessitates a grain mixture with no less than 51% corn and must be matured in new charred oak barrels.
