The resulting wash is then distilled, usually in copper pot stills, to refine the flavour and concentrate the alcohol. This distilled spirit, now referred to as “new make spirit,” is placed in wooden casks to age, acquiring its complexity and depth of flavour over the years.
Regions including Scotland, Ireland, the United States, and Canada are celebrated for their whisky production, each possessing unique styles and stringent regulations. Scotch whisky, for example, must be aged for at least three years in oak casks within Scotland, resulting in its complex character. Conversely, American Bourbon, another type of whisky, necessitates a grain mixture with no less than 51% corn and must be matured in new charred oak barrels.
