A delicious Chablis from the excellent 2019 vintage. This is made from 100% Chardonnay by Robert Goulley, a noted family-run producer. It's fermented with wild yeasts, and aged in stainless steel tanks on its lees (used yeast cells) which provides a creamy richness. Chablis is perhaps the ultimate oyster wine but also goes magnificently with goat's cheese.
Green apple and citrus, with creamy leesy notes, and a crisp saline finish.
