
Ice wine has become a Canadian speciality, no wonder as the winters get so cold. THe process involves leaving very ripe grapes, in this case roussanne, out on the vine into the winter so that the water in the grape freezes but the sugar doesn't. Whenthe grapes are pressed, all you get is a very concentrated sweet juice which when fermented creates a wine that is both incredibly sweet and very fresh. This would be incredible with blue cheese.
Huge sweetness, think tinned peaches and perfectly ripe apricots, combined with a fresh acidity that makes every sip a joy.
