A Toji is a name given to a grand master in sake making, and this Japanese blend was put together by one of those grand masters! The use of a smaller pot still than commonly found in whisky production helps to reduce harsher flavour characteristics, as well as the need for long aging.
Oaken vanilla and cracked peppercorns open the way, before layers of caramel, and smoky tea creep in.
Honeyed prunes and sultanas follow more warming oaken spice, with creamy grain, and biscuity malt shining through.
Fruited flapjack, warming cinnamon and pepper, a whisper of peat, with nutty oak, and caramel lingering.
