
A new addition to Westland's Outpost Range, Solum sees the Seattle-based distillery unveiling its explorations into American peat. Limited to an annual release of 15 casks, the whiskey is distilled entirely from American peated malt, and matured in a combo of new American oak and first-fill bourbon oak casks.
Spiced apple and toasted oak lead the way, with cinnamon snaps, hints of cranberry, charred herbs, and smoked hickory.
Vibrant peat and those smoky charred herbs carry through, joined by earthen coffee grounds and oaken vanilla.
There are notes of honey and floral tea, though vegetal peat, buttered rye bread, and savoury woody spices linger.
