The third in the Signature Creation range and The Last Drop Distillers’ first Irish whiskey release, this spectacular 32-year-old single malt was selected, married, and finished by the founder of JJ Corry Irish Whiskey, and founding member of The Assembly, Louise McGuane. She met with Rebecca Jago, managing director of The Last Drop Distillers, and Helen Mulholland, master blender of Lough Gill distillery, at the McGuane family farm in Cooraclare to taste a range of exceptionally rare Irish whiskeys from JJ Corry’s library, selecting a final array of vintage 1991 single malt and vatting them together in an oloroso sherry butt for finishing. A total of 663 bottles were filled at 46.4% ABV.
