Another mysterious Orkney single malt from Signatory! While the distillery remains a secret, we do know that the whisky was distilled in 2006, and left to age in a pair of hogsheads for 13 years until it was bottled for the Un-Chillfiltered series. Perhaps you could use your powers of deduction (also known as tasting) to figure out which of the two distilleries on Orkney this hails from!
The "tastes like a Scapa" comment below made me chuckle as this is merely a naked HP, left alone for almost 14 years in refill casks to preserve the original character of the spirit and free of any Edrington shinanigans such as chill filtration and caramel colouring, not to mention the cringe-worthy Viking marketing! Indeed, perhaps the reviewer below would have been kinder had all these aspects as found in the OB HPs been included here also - how sad.
First impression confusing but kept coming back to it. Very savoury on the nose. The taste neat is quite bitter but add a teaspoon of water and she quickly softens up. Cornish pasty followed by a waxy build up and amaretto into the finish.
A touch of spice, honey and peat but overall an unfortunately disappointing dram. Tastes like a Scapa rather than Highland Park. Wouldn’t buy again.
